Litti sattu

#biharidelicacy# Litti chokha is one of the popular dishes of Bihari cuisine. It is a traditional dish prepared for breakfast, lunch or dinner and is made using whole wheat flour with stuffing of roasted gram flour known as sattu and served dipped in ghee. This litti goes perfect with chokha made up of roasted brinjal, potatoes and tomatoes mixed with onion and garlic. This is a mouth watering dish and can be found in every corner of Bihar and has become very popular in all over India. Nowadays, littis are served in marriage parties, potluck, kitty parties and has become a compulsory dish for new year parties in many households of Bihar. It is like a surprise when you will know that traditionally these littis and all the veggies for chokha are roasted on charcoal which makes it aromatic. Peanut -coriander-mint chutney

#withallsouthindianbreakfast# This simple flavorful chutney is made by mixing roasted Peanuts, mint and coriander leaves and goes well with Idli, dosa, uttapam and many other breakfast, lunch or dinner dishes. I use this chutney as a sandwich spread too. Sharing the recipe: Ingredients: 1) 3/4 cup roasted peanuts 2) 1/2 cup mint washed 3) 1/4 cup coriander leaves washed 4) 2 green chillies 5) 1/4 cup mustard seeds 6) 1/2 onion 7) 1/2 tsp lime juice 8) 1/2 tsp mustard oil 9) salt as per your taste 10) 3-4 cloves garlic (optional) 11) few curry leaves Method: Blend roasted peanuts, coriander, mint leaves, onion and garlic to a smooth consistency. Add lime juice and salt. Temper the chutney with oil, mustard seeds and Curry leaves.

Uttapam

#southindianbreakfast# Uttapam is a very common breakfast food in South India and is made using fermented lentil and rice batter with vegetables as topping. It is served with chutney and sambhar. Uttapam is topped with different veggies like onion, tomato, carrot, capsicum, ginger and coriander leaves. Uttapams are crisp from the bottom and are soft and fluffy on the top. Whenever I prepare batter to make idlis and dosa, uttapam goes side by side as you can use the same batter for all these dishes.  There are different other compositions you can add in your batter with different cereals. Gulab jaamun trifle

Gulab Jamun Trifle Pudding is a fusion recipe where Jamuns are served with custard and whipped cream. Making this pudding is very simple and easy and can go well for kitty parties, get togethers and for potlucks. I am sharing the method how I did it: This recipe serves for 2. Ingredients: 1) 3 pc medium size kala Jamuns 2) 1/4 tbsp chopped pistachios 3) 1/4 tbsp chopped almonds 4) 1.5 tbsp custard powder 5) 1/2 cup milk 6) 1 tbsp sugar 7) 1 tbsp whipped cream Method: Step 1: Dissolve custard powder in 2 or 3 tbsp milk.Heat the   remaining milk with sugar in it.Add dissolved  custard in the hot milk, stirring continuously,   there should be no lumps. #weekenddinner# White sauce veg pasta is a delicious Italian dish made by boiling pasta, tossed in white sauce with some veggies and garnished with herbs and chilli flakes. White sauce is made using butter, maida, milk and creamy cheese. This white sauce pasta is favorite with my family and I make it with different variations. It goes fantastic in dinner and is itself a complete meal. The recipe shared is the basic version and you can try adding your favorite vegetables. Recipe: Ingredients for making aata dough: -1 cup wheat flour -1/2 tsp ajwain- mangraila(mixed) -water -salt as per your taste -ghee for cooking Ingredients to make the filling: -1 cup peas washed -1/4 tsp ghee -1/2 tsp cumin seeds -1 tsp ginger chopped -1/4 cup water -a pinch of turmeric powder -1 tsp sugar -salt as per your taste Method to make aata dough- Step 1: Take wheat flour in a bowl, add salt, ajwain-mangraila, mix well. #healthyandquickparatha# Methi parathas are again a kind of bread made with methi leaves mixed in whole wheat flour along with some spices and is a popular breakfast food of winter season in North India. These healthy, delicious and aromatic dish are rich in iron, controls blood sugar and helps in constipation. There are many other recipes you can try with methi leaves. Today I am going to share paratha recipe. Recipe: Ingredients: 1) 1.5 cup finely chopped methi leaves 2) 2 cups whole wheat flour 3) 1 tsp black pepper powder 4) 1/2 tsp grated ginger 5) 1/2 tsp ajwain 6) 1/2 tsp black cumin seeds 7) 1 tsp salt 8) 1/2 cup water Method: Step 1: Mix all the ingredients and gradually add water to knead and make a soft dough. #restaurantstyleveg# Recently I planned to go out for dinner specifically a North Indian pure veg restaurant and had ordered veg afgani and naan in main course. The taste was awesome. This is a kind of mix vegetables cooked in red gravy. So, I thought of trying to make this at home with some fresh seasonal vegetables and it turned out to be delicious. Chokha for sattu litti

#biharidelicacy2# There are different kinds of chokhas you can make but trust me you cannot beat this Bihari version bharta. The aromatic, mouth watering, fabulous chokha goes awesome with sattu litti. I am sharing the recipe how I do it. Ingredients: 1) 1 medium size brinjal 2) 4 tomatoes 3) 2 potatoes 4) 1 tsp garlic chopped 5) 1 medium size onion chopped 6) 1 green chilli chopped 7) 2 tsp mustard oil 8) coriander leaves for garnishing 9) salt as per your taste Method: Step 1: Roast brinjal , tomatoes and potatoes on hot charcoal or in a gas oven on high glame.(you can use boiled potatoes and tomatoes). Peel it and wash. Step-2: Mash it properly with the help of spoon, mix onion, garlic and green chillies. Step-3: Add salt and mustard oil, mix well garnish with coriander leaves. Serve with littis.

Toor Dal is not only good in taste but is a very good source of protein and have good amount of fibre in them and also fats which is essential for the body. This is very popular street food snack, I don't think anyone has not tasted it on the streets once or have not tried at home to make it. Some people prefer to eat it spicy or some may want it added with sweet chutney. My version is a kind of mix sweet and savoury. I often make it as an evening snack added with sprouts. Bhindi bhunjiya(dry plain okra)

#healthygreendailyneed# Ladyfingers/Okra/Bhindi is a green vegetable rich in vitamins and minerals and is also known for its high soluble and insoluble fibre content. It also helps in weight loss. Though I make bhindis in different ways either dry or with gravy with different variations, but today sharing the most simplest, easiest and quickest version of my recipe for dry bhindi bhunjiya. Recipe: This recipe serves for 3. #tastysujiidli# Rava or suji idli is a popular breakfast food originated from South India. It varies from the traditional idli recipe and is made up of mixing rava with curd, eno and salt. It is easy, quick and simple to make as it does need grinding of lentils and rice and then fermenting but made instantly. Sharing the recipe how I do it to make delicious idlis. Ingredients: -1 cup rava(suji) -3/4 cup curd(sour curd is preferred) -1 tsp eno (I have used lemon flavor) -1/2 tsp salt Method: -take curd in a bowl. -add rava and mix well. -add salt keep mixing by stirring the batter, keep covered for two hours. Add eno and mix well you will find a net kind of formation on the walls of the bowl. Sambhar is a kind of Dal made by mixing some vegetables and Tamrind. This is very popular in South India and is served with idli, dosa and with many other South Indian dishes. There are many ways people make it, I am presenting my version. Recipe : This recipe serves for 4-5. -toor dal- 2 cups -Lauki -8-10 cubed pieces -Brinjal - 3-4 cubed pieces( I do not add) -carrot-1 medium sized chopped in circular shape -Radish- small size chopped in circular shape -Tomato- 2 medium size chopped in circular shape   -Water-3 cups -turmeric powder  and salt as per your taste- -tamrind water- 1 tbsp (soak tamrind for 20 min and strain) -Curry leaves -sambhar masala -1 tbsp -mustard seeds -ghee for tadka Method: -Boil 2 cups of water in pressure cooker add tumeric powder and salt. -Add toor dal, wait for 2-3 whistles on medium flame. -Mash properly cooked dal smooth with the help of spoon. -Mix all vegetables, few Curry leaves,1 cup water ,salt and little turmeric

It is suitable for any occasion whether it's a marriage function, birthday party, or you have guests at home. If you are in hurry or not not willing to cook, or you are short of green veggies at home this option works like magic and can be served with rice or chapati. Chhola goes wonderful with bhatura but when made with onion tomato gravy rich in spices, this flavorful dish is served with rice or chapati. People make it in different ways. Here, I am presenting my version. Recipe: Ingredients: -1 cup chickpeas soaked overnight -1 large onion chopped -2 medium size tomatoes chopped -1 tsp ginger garlic paste -1 red dry chilli -turmeric powder -salt -3/4 tsp coriander powder -1/3 tsp garam masala (3/4 tsp chhola masala can be used instead of coriander powder and garam masala) -coriander leaves for garnishing -1 cup water Method: -add chickpeas, 1/2 cup water, turmeric powder and salt in pressure cooker, wait for 4-5 whistles usually takes 6-7 min or until peas are completely cooked. -by the time heat oil in a kadahi, add cumin seeds, red dry chilli, let it crackle, add onion, ginger-garlic paste, saute for 2-3 mi

Tomato chutney recipe is one of them and is made up of ripe tomatoes and basic spices which are easily available in every kitchen. Sharing the recipe: This recipe serves for 4. Ingredients: -3 medium tomatoes chopped -1/4  tsp fennel seeds -1/4 tsp methi seeds -1/4 tsp cumin seeds -1/4 tsp black mustard seeds -a pinch asfoetida -1/2 tsp turmeric powder -1/2 tsp salt -1 tbsp sugar/ jaggery powder -1/2 tbsp mustard oil -1/2 cup water Method: -heat oil in a kadahi, add all dry spices, add tomatoes, salt and turmeric powder, cook covered for 4-5 minutes. -when tomatoes become soft, mash with spoon in kadahi itself, add sugar/jaggery powder, add water, boil for 2 minutes. Take out in a bowl and serve with kachauris, parathas, or any other snacks with which it goes well.
