Matar parathas

Sharing a simple recipe to make peas stuffed parathas. This paratha is my personal favorite when served with sweet tomato chutney specially in winters.

Recipe:

Ingredients for making aata dough:
-1 cup wheat flour
-1/2 tsp ajwain- mangraila(mixed)
-water
-salt as per your taste
-ghee for cooking

Ingredients to make the filling:

-1 cup peas washed
-1/4 tsp ghee
-1/2 tsp cumin seeds
-1 tsp ginger chopped
-1/4 cup water
-a pinch of turmeric powder
-1 tsp sugar
-salt as per your taste

Method to make aata dough-
Step 1:

Take wheat flour in a bowl, add salt, ajwain-mangraila, mix well.

Step 2:

Add water gradually and knead well to make a soft dough, keep it covered for 10-15 minutes

Step 3:

Divide it into 8 equal round shape balls.

Method to make the filling:

Step 1:

Heat ghee in a kadahi, add 4-5 cumin seeds, let it crackle, add a pinch of turmeric powder, peas and salt, immediately add water, cook covered for 5 minutes on low flame.

Step 2:

Remove the lid, peas should have become soft, saute for another 2-3 minutes and let the remaining water dry, add sugar and let it melt and peas be shrink, switch off the flame and take it out in a plate, let it cool.

Step 3:

Add peas, cumin seeds and ginger into a grinder and grind it very smooth without adding water,
once you reach the smooth consistency, start filling this into balls(dough) one by one.

Method to make matar paratha:

Fill the blended peas into balls, roll it with roller applying wheat dust to make parathas, cook applying ghee on tawa by flipping over twice or thrice.

-serve hot with sweet tomato or any other chutney of your choice.
