Kala jamun

Kala jamuns are classic Indian ball shaped sweet dish made of mawa (solid milk) and flour soaked in sugar syrup.
We find these jamuns very easily in almost all the sweet shop but I love this sweet made at home with mawa only and wanted to make by my own, though I could make it after several trials. There are again different methods to make this delicious sweets but I have learnt and copied what I have seen my mother and aunts doing.

Sharing the recipe:

Ingredients:
1) 200 gms mawa (solid milk made by 1 kg full cream milk)
2) 3-4 tbsp all purpose flour ( I added wheat flour, you can add maida too)
3) 1/2 tsp cardamom powder
4) 1 tbsp milk
5) 1/4 tsp of baking soda
6) oil for frying jamuns
7) 1/2 cup water
8) 1.5 cup sugar

Method:

Step 1:
Take mawa in a bowl. Mash it very well. There should be no lumps.Then add all purpose flour (maida), baking soda and cardamom powder to the mashed mawa.

Step 2:
Mix well. Add milk and gather together to form a dough with milk. Don't knead.

Step 3:
Just gently mix. If you are unable to form balls or if the mixture appears dry, then add a few teaspoons of milk. Cover the dough and keep aside for 30 mins.

Step 4:
Make small balls from the dough. Keep aside covered.

Step 5:
Dissolve sugar in water. Heat the sugar solution till it become sticky.

Step 6:
heat oil till its medium hot. Lower the flame and wait for a minute. Then gently place the gulab jamun in the oil. Once they start to have tiny golden spots, keep on rotating them in the oil, so that the gulab jamun are evenly browned.Then place the hot gulab jamun in the sugar syrup. Continue frying the gulab jamun this way in batches.


Serve gulab jamun warm
