Litti chokha is one of the popular dishes of Bihari cuisine. It is a traditional dish prepared for breakfast, lunch or dinner and is made using whole wheat flour with stuffing of roasted gram flour known as sattu and served dipped in ghee.
This litti goes perfect with chokha made up of roasted brinjal, potatoes and tomatoes mixed with onion and garlic.
This is a mouth watering dish and can be found in every corner of Bihar and has become very popular in all over India. Nowadays, littis are served in marriage parties, potluck, kitty parties and has become a compulsory dish for new year parties in many households of Bihar.
It is like a surprise when you will know that traditionally these littis and all the veggies for chokha are roasted on charcoal which makes it aromatic. Though there are many cooking methods. I made it on gas oven. Sharing my style for preparing this tasty food.
Recipe:
This recipe makes 10 littis.
Ingredients to make dough:
1) 2 cups whole wheat flour
2) 1/4 cup melted ghee
3) 1/2 tsp ajwain
4) 1/2 tsp black cumin seeds
5) salt as per you taste
6) water
Ingredients to make the filling:
1) 1/2 cup sattu
2) 1/2 tsp ajwain
3) 1/2 tsp black cumin seeds
4) 1 tsp mustard oil
5) 1 tsp pickle masala (I use home made mango pickle masala)
6) 1 tsp black pepper powder
7) 2 medium size onions chopped finely
8) 1 tsp ginger grated
9) 1 tsp garlic finely chopped
10) 2 tsp lemon juice
11) 1 green chilli chopped finely
12) salt as per your taste
13) 2 tsp water
* You can also add other spices of your choice to make it more spicy and savory.

Method:
Step 1:
Mix well all the ingredients to make the dough, gradually add water and knead well to make a dough neither too soft nor too hard, keep it aside for 15 minutes.
Divide into 10 equal size balls.
Step:2
Mix all the ingredients to make the fillings, start filling this mix into the balls one by one.
Step 3:
Preheat the gas oven for 20 minutes, put all the stuffed balls and start roasting by flipping littis on medium flame.
Serve hot immersing in ghee with chokha.
