Aloo palak ki sabji in pressure cooker- ever heard of it? The good old healthy nutritious veggie, rich in iron with a twisted recipe.
Just a simple tweak in the classic or traditional way of making aloo palak makes it quite interesting and tastier. You may start loving the bitterness of spinach.
Sharing the recipe:
This recipe serves for 4.
Ingredients:
-A small bunch of spinach, washed and chopped finely
-1 medium size potato cubed
-1 medium onion
-2 tomatoes chopped
-1 tsp ginger garlic paste
-1 red dry chilli
-1/4 tsp cumin seeds
-1/4 tsp methi seeds
- a pinch of asfoetida
-turmeric powder
-salt
-1/2 tbsp mustard oil for cooking
-1/2 cup water
-1/2 tsp sabji masala
Method:
- heat oil in a pressure cooker, add cumin seeds, methi seeds, dry red chilli and asfoetida, let it crackle, add chopped potatoes, saute for 2 minutes on medium to high flame, add onion, salt, turmeric powder, ginger-garlic paste, saute for 2 minutes on medium to high flame.
-add chopped spinach, mix well, it starts releasing water, mix and saute for 2 minutes, the leaves will become soft, add tomatoes, mix and saute for 2-3 minutes
-add sabji masala and water, mix well, close the lid and wait for 2 whistles.
-remove the lid, mix and simmer boil 1 minute.
Serve hot with roti or rice.
