Being a North Indian I have always tried to experience South Indian food and culture. You succeed when you include it in your home cooking.
Idli-Sambhar is one such South Indian dish and is considered as a super healthy breakfast.
At our home not only my husband and me but our munchkin Atharv also likes to have Idli Sambhar and peanut chutney for breakfast. Anyways, who doesn't like this awesome dish?
So, here is the recipe:
For idli batter:
Ingredients:
Rice- 2 cups (I prefer basmati rice)
Split Urad dal - 1 cup
Baking soda- 1/2 tsp
Salt as per your taste.
Method:
-Wash and soak urad dal and rice separately for 4-5 hours.
-Remove excess water from the urad dal and grind it finely using less water, also remove the excess water from the rice and using less water, grind it a little thicker.
-Mix both, and prepare a thick batter, keep it in a big bowl and leave it covered for 10-12 hours.
-Add baking soda and salt to the fermented mixture. Add little water if mixture is too thick.
-Boil water in idli maker and pour into it on high flame .wait for 15-20 min and your idli is ready.
For Sambhar we need:
-Toordal- 2 cups
-Lauki -8-10 cubed pieces
-Brinjal - 3-4 cubed pieces( I do not add)
-Carrot - 1 medium sized chopped in circular shape
-Radish- small size chopped in circular shape
-Tomato- 2 medium size chopped in circular shape.
-Water -2 to 3 cups
-Turmeric powder and salt as per your taste.
-Tamrind water 1 tbsp (soak tamrind for 20 min and strain)
-Curry leaves
-Sambhar masala -1 tbsp
-Mustard seeds
-Ghee for tempering.
Method:
-Boil 2 cups of water in pressure cooker add tumeric powder and salt.
-Add toor dal .Wait for 2-3 whistles on medium flame.
-Mash properly cooked dal smooth with the help of spoon.
-Mix all vegetables,few Curry leaves,1 cup water ,salt and little turmeric powder in the prepared dal.
-Wait for 1-2 whistles on low flame.
-Once pressure is removed add sambhar masala, tamrind water and boil for 2-3 minutes.
-Heat ghee in pan add few Curry leaves and mustard seeds. Give your sambhar a fantastic tadka.
And it's ready ....
For peanut chutney we need:
-Peanut - dry roasted 1 cup
-Ginger - 1/2 inch
-Red dry chilli- 1 small
-Curry leaves, Oil and mustard seeds for tempering.
Method:
Grind all the ingredients into a fine paste adding water according to your consistency you like and then temper it with oil , mustard seeds and Curry leaves.
Add little salt and few drops of lemon juice.
You can choose any other chutney of your choice.
And now you are ready with your complete meal...:)
