#myfavoritesweet# Kala jamuns are classic Indian ball shaped sweet dish made of mawa (solid milk) and flour soaked in sugar syrup. We find these jamuns very easily in almost all the sweet shop but I love this sweet made at home with mawa only and wanted to make by my own, though I could make it after several trials. There are again different methods to make this delicious sweets but I have learnt and copied what I have seen my mother and aunts doing. Sharing the recipe: Ingredients: 1) 200 gms mawa (solid milk made by 1 kg full cream milk) 2) 3-4 tbsp all purpose flour ( I added wheat flour, you can add maida too) 3) 1/2 tsp cardamom powder 4) 1 tbsp milk 5) 1/4 tsp of baking soda 6) oil for frying jamuns 7) 1/2 cup water 8) 1.5 cup sugar Method: Step 1: Take mawa in a bowl. #kadahi paneer It's been really a tough time we all are going through fighting with COVID 19. There is lockdown all over the country. These are the times when the family comes together, understand each other and distribute the responsibilities with love and care. While everyone is at home with no possibility of ordering in or dining at a restaurant it becomes a burden to decide the menu with limited veggies available and make everyone happy with the food you cook. So, I decided to make kadahi paneer in dinner. Kadahi paneer is a very   popular North Indian dish and is served with, rice, chapati or naan . Sharing the recipe. #flavoredkachauri# One of the most loved Indian food, kachauris are absolutely sensational and ultimate snack or mid day meal that you just won't be able to resist. This is the most popular road side snack of North India. Kachauris have a number of varieties, either made as plain khasta kachuri or made with stuffed Dal and spices. Here, I am sharing recipe of a variety of kachauri-palak kachauri which is crispy and healthy. Ingredients: 1) 1 cup whole wheat flour 2) spinach puree 6 tbsp 3) 1/8 cup melted ghee 4) 1/2 tsp ajwain 5) 1/2 tsp black cumin seeds 6) 1/2 tsp black pepper powder 7) salt to taste 8) water to knead dough 9) oil for deep frying Method: Step 1: Mix wheat flour, ghee, spinach puree, black cumin seeds, black pepper, ajwain and salt in a bowl. Knead into a stiff dough (add water if required). Step 2: Heat sufficient oil in a kadahi. Divide the dough into 8 equal portions, roll it into puris. #biharidelicacy# Litti chokha is one of the popular dishes of Bihari cuisine. It is a traditional dish prepared for breakfast, lunch or dinner and is made using whole wheat flour with stuffing of roasted gram flour known as sattu and served dipped in ghee. This litti goes perfect with chokha made up of roasted brinjal, potatoes and tomatoes mixed with onion and garlic. This is a mouth watering dish and can be found in every corner of Bihar and has become very popular in all over India. Nowadays, littis are served in marriage parties, potluck, kitty parties and has become a compulsory dish for new year parties in many households of Bihar. It is like a surprise when you will know that traditionally these littis and all the veggies for chokha are roasted on charcoal which makes it aromatic. Peanut -coriander-mint chutney

#withallsouthindianbreakfast# This simple flavorful chutney is made by mixing roasted Peanuts, mint and coriander leaves and goes well with Idli, dosa, uttapam and many other breakfast, lunch or dinner dishes. I use this chutney as a sandwich spread too. Sharing the recipe: Ingredients: 1) 3/4 cup roasted peanuts 2) 1/2 cup mint washed 3) 1/4 cup coriander leaves washed 4) 2 green chillies 5) 1/4 cup mustard seeds 6) 1/2 onion 7) 1/2 tsp lime juice 8) 1/2 tsp mustard oil 9) salt as per your taste 10) 3-4 cloves garlic (optional) 11) few curry leaves Method: Blend roasted peanuts, coriander, mint leaves, onion and garlic to a smooth consistency. Add lime juice and salt. Temper the chutney with oil, mustard seeds and Curry leaves.

Uttapam

#southindianbreakfast# Uttapam is a very common breakfast food in South India and is made using fermented lentil and rice batter with vegetables as topping. It is served with chutney and sambhar. Uttapam is topped with different veggies like onion, tomato, carrot, capsicum, ginger and coriander leaves. Uttapams are crisp from the bottom and are soft and fluffy on the top. Whenever I prepare batter to make idlis and dosa, uttapam goes side by side as you can use the same batter for all these dishes.  There are different other compositions you can add in your batter with different cereals.
