White sauce veg pasta

White sauce veg pasta is a delicious Italian dish made by boiling pasta, tossed in white sauce with some veggies and garnished with herbs and chilli flakes.
White sauce is made using butter, maida, milk and creamy cheese.
This white sauce pasta is favorite with my family and I make it with different variations.
It goes fantastic in dinner and is itself a complete meal.

The recipe shared is the basic version and you can try adding your favorite vegetables.

Recipe:

Ingredients:
1) 1.5 cups pasta
2) 4-5 cup water
3) 2 cup mix vegetables ( broccoli, mushroom, bell peppers, sweet corns)
4) 2 cup full cream milk
5) 1 tbsp maida
6) 4-5 tbsp cheese(cheddar cream cheese)
7) 3 tbsp butter (1 tbsp to be used for vegetables)
8) 1/2 tsp black pepper crushed
9) 4 cloves garlic chopped
10) 3/4 tsp red chilli flakes
11) 3/4 tsp oregano
12) salt as needed

Method:

Step 1:
Bring 4-5 cups water to boil along with salt, then add pasta.

Step 2:
Pasta should be tender not too soft, drain off the excess water reserving 3-4 tbsp of water.

Step 3:
Chop all the vegetables. Add 2 tsp of butter in a pan and saute the veggies until soft.
Keep aside.

Step 4: to make white sauce:
Add the remaining butter in the pan. Add garlic and saute for a minute. Then add maida.

Step 5:
Saute it untill the raw smell goes off. There may appear lumps in the flour, just break the lumps.

Step 6:
Pour 1/2 cup milk and whisk continuously with the help of spatula and break the lumps if any.

Step 7:
Pour rest of the milk and mix well. Cook until the mixture thickens.

Step 8:
Add cheese and mix gently. Cook until it reaches thick sauce consistency.

Step 9:
Add oregano and grounded pepper. Switch off the flame.

Step 10:
Mix well cooked pasta and veggies to coat with the creamy sauce, add more salt if required. Sprinkle chilli flakes and serve immediately.

* You can add reserved pasta water in the white sauce if it appears too thick.
