Mix veg stir fry

I always choose to make use of seasonal vegetables and decides the menu for dinner accordingly.
Whenever I am stuck what to prepare, I just make mix veg stir fry. My recipe is healthy as well as delicious too.
The choice of vegetables often depend on what you have on hand. The making process is very simple.

Sharing the recipe.
This recipe serves for 4

Ingredients:

-1/2 of a small cabbage chopped
-1 medium carrot chopped
-6-8 french beans chopped
-1 medium capsicum chopped
-1 medium tomato chopped
-1 small potato chopped
-1/4 cup peas
-1 medium onion sliced
-1 tsp ginger chopped
-1 tbsp mustard oil for cooking
-1/2 tsp cumin seeds
-black pepper powder
-1/2 tsp coriander powder
-coriander leaves and chopped green chilli
-salt and turmeric powder

Method:

-heat oil in karahai, add cumin seeds, let it crackle, add potatoes and beans, saute for 2 minutes.
-add cabbage, carrot, onion, ginger, saute for 2 minutes, cook covered for 2-3 minutes.
-add capsicum and tomatoes, salt and turmeric powder, coriander powder, mix well ,cook stiring for another 2 minutes.
-sprinkle black pepper powder, garnish with coriander leaves and green chillies.

Serve hot with rice or chapati or can have as a side dish.

You can change the proportion of vegetables or add/remove some veggies according to your choice and availability.
