Bhindi bhunjiya(dry plain okra)

Ladyfingers/Okra/Bhindi is a green vegetable rich in vitamins and minerals and is also known for its high soluble and insoluble fibre content. It also helps in weight loss.

Though I make bhindis in different ways either dry or with gravy with different variations, but today sharing the most simplest, easiest and quickest version of my recipe for dry bhindi bhunjiya.

Recipe:
This recipe serves for 3.

Ingredients:

-250 gms bhindi
-1 tbsp mustard oil
-1/2 tsp cumin seeds
-a pinch of asfoetida
-turmeric powder
-salt
-1/2 tsp lemon juice
-1/4 tsp black pepper powder

Method-
-Wash bhindis properly, put it on a strainer, chop horizontally.


-Heat oil in a kadahi, add cumin seeds, let it crackle, add asfoetida and chopped bhindis.
-Cook covered for 3 minutes.

-Add salt and turmeric powder, cook for another 3 minutes, keep stirring in between.
-Take out in a bowl, let it cool a little then add lemon juice and sprinkle black pepper powder.

Serve this with roti, paratha or rice and Dal.
