It is the most easiest and quickest recipe to make and loved by all be it's kids or elders. It is suitable for any occasion whether it's a marriage function, birthday party, or you have guests at home.
If you are in hurry or not not willing to cook, or you are short of green veggies at home this option works like magic and can be served with rice or chapati.

Sharing the recipe: serves for 4

Ingredients:
-4-5 boiled, peeled and cubed potatoes
-1 medium tomato chopped
-1 medium onion chopped
-1/2 cup peas
-1 tsp chopped ginger
-1/2 tsp cumin seeds
-1/2 tsp black mustard seeds
-1 dry red chilli
-1/2 tsp sabji masala (I prefer home made spice masala) you can adjust accordingly.
-1/2 tsp turmeric powder and salt as per your taste
-1 tbsp mustard oil for cooking
-1 cup water

Method:
- heat oil in a kadahi, add cumin seeds, black mustard seeds, dry red chilli, let it crackle.
-add onions, saute for 3 minutes on medium flame, then add tomatoes, peas and ginger, cook for 3-4 minutes, add turmeric powder and salt
-add potatoes, mix well, cook for 3-4 minutes on medium to high flame, potatoes should become brown in color, add sabji masala, 1 cup water and cover
- simmer and boil for 2 minutes.

Serve hot with rice or roti.
